Juicy, zesty and full of flavor, this Italian Beef Recipe with Pepperoncini is an easy slow cooker dish, perfect for lunch or dinner.
Growing up, we almost always had a beef roast cooking in the slow cooker every Sunday. It became a joke between us kids, “Roast Beef Sunday.” But now that I have my own family, I see why my parents liked it so much. Having a roast in the slow cooker helps make for a wonderful, restful Sunday.
Sear the Beef for Added Flavor
I almost always do my roast beef the same way with chopped vegetables and simple seasoning. This Italian beef with pepperoncinis is an easy twist on the classic and adds some variety to my regular meal rotation. No matter how I’m making my beef roast in the slow cooker, I always like to sear it in a frying pan first. Simply season the meat with salt and pepper. Add olive oil to a hot frying pan and sear all the sides of the roast until they have nice brown crust. You don’t have to this if you’re in a hurry, but I highly recommend it. Searing the roast gives it so much more flavor.
Add Seasoning and Pepperoncinis
Besides the salt, pepper and olive oil used for searing the beef, there really are only 3 ingredients to this recipe. Put the seared beef in the slow cooker. Then, season it with Italian dressing mix on all sides (the kind that comes in packets to make your own dressing). Pour pepperoncinis and the juice over the top of the seasoned roast, and you’re done. Put the lid on the slow cooker and cook on low all day, 8-10 hours. If you’re making this for lunch, cook on high for 4-5 hours.
A Note about Pepperoncinis
We like pepperoncinis in our house. They have a little spice, but not too much, which is balanced with the vinegary brine they are pickled in. I have noticed, in this recipe the peppers seem to be spicier after cooking all day. And it’s a little too much spice for my kids. So, I use the whole pepperoncinis. That way I can pull them out when it’s time to eat and only put them on the adult plates. If everyone likes the heat, you can get the sliced pepperoncinis instead and mix them all in with the meat.
Shred the Beef
After the beef is finished cooking, use tongs to take out the whole peppers and set them aside. Or, if you used sliced peppers (see note above) skip this step. Use two forks or meat claws to shred the beef. Finally, use tongs to toss the shredded meat in the juices in the bottom of the slow cooker.

Easy Italian Beef Recipe with Pepperoncini in the Slow Cooker

Ingredients
- 3 lb Beef Roast
- 1 Cup Pepperoncini and Juice
- 2 Tbsp Olive Oil
- 1.4oz Italian Dressing Mix (2 Packets)
- Salt and Pepper to taste
Directions
- Heat a fry pan over medium-high heat. Season the roast with salt and pepper on all sides. Once the pan is hot, add the olive oil to the pan. Sear the roast on all sides until they have a brown crust.
- Once the roast is seared on all sides, move it to the slow cooker. Sprinkle the roast with the Italian dressing mix, turning it over with tongs to coat all sides.
- Pour the pepperoncini and juice over the roast, and put the lid on the slow cooker. Cook on low all day, 8-10 hours or on high for 4-5 hours.
- Before serving, shred the beef and toss with tongs in the juice at the bottom of the slow cooker. If you use whole pepperoncini, set them aside while shredding the meat. Or if you used sliced peppers, mix them in with the beef. See notes on pepperoncinis above.
