This recipe has been a favorite of mine for a long time.  I’ve always enjoyed the brightness citrus juice can bring to meals.  My mom made this when I was growing up, and I continued to make it for myself after I left for college. Now I make it for my family, and they all love it as much as I do.

Lime and herb marinated chicken is very freezer friendly.  In college, I would make up a big batch and freeze individual-sized packets for myself to pull out for dinner. These days, I like to make extra to slice up and keep in the fridge for lunch.  It tastes great on salad!! To make the marinade, simply combine lime juice, canola oil, dried rosemary, dried thyme, salt honey and crushed garlic.

This recipe is so versatile. For instance, you can sauté the chicken in a fry pan and grill it on an indoor grill pan (like I am here). Similarly, in the summer, we cook it outside on the grill.

Lime and Herb Marinated Chicken

Ingredients

  • Juice of 2 Large Limes, about 1/2 cup
  • 1/4 cup Canola Oil
  • 2 Tbsp Honey
  • 1 tsp Dried Thyme
  • 1 tsp Dried, Crushed Rosemary
  • 1 tsp Salt
  • 3 Cloves Garlic, Crushed
  • 4 Boneless, Skinless Chicken Breast

Directions

  1. In a large ziplock bag, combine lime juice, canola oil, honey, thyme, rosemary, salt, and garlic.
  2. Close bag and shake or squeeze with your hand to combine ingredients.
  3. Add chicken breast and seal bag, removing as much air as possible. Put the bag of chicken in the refrigerator and marinate for 4 hours up to overnight. You can also put the bag of marinating chicken in the freezer at this point.
  4. When you’re ready to start cooking, take the chicken out of the refrigerator (or defrost if frozen). Heat fry pan or grill pan to medium heat. If the heat is to high, the sugar in the honey will burn before the chicken is cooked.
  5. Once your pan or grill is pre-heated, add the chicken and discard marinade. Cook about 4 minutes per side until cooked through.
