I have to give my husband all the credit for this recipe. He has loved hot wings since the day we met, and I don’t think I ever tried hot wings before he introduced me to them. Over the course of our marriage, I’ve come to enjoy hot food, but I’m still more of a medium girl.

Buffalo Chicken Salad

This recipe is a lot quicker to whip up than traditional wings. Just a few simple ingredients and your done.  We love the flavor of Frank’s Red Hot, but you can use any hot sauce you like.  I used canned chicken breast because that’s what I had on hand, however left over rotisserie chicken would taste great too.

I served the Buffalo Chicken Salad in lettuce wraps.  It would also taste great on crackers for lunch, as a snack or an appetizer.

Buffalo Chicken Salad Lettuce Wraps

A perfect lunch inspired by hot wings. Buffalo Chicken Salad Lettuce Wraps have the tasty buffalo sauce, sweet carrots and crunchy celery, all wrapped up in romaine lettuce.

Ingredients

  • 2-3 Stalks of Celery
  • 1/2 cup Shredded Carrots
  • 12.5 oz can of Chicken Breast, drained
  • 3 Tbsp Whipped Cream Cheese
  • 2 Tbsp Mayonnaise
  • 2 Tbsp Frank’s Red Hot, or more to taste*
  • Romain Lettuce Leaves

Directions

  1. Drain can of chicken breast and add to mixing bowl.  Break up the chicken with a fork.
  2. Chop the celery, grate the carrots and add to bowl.  Add cream cheese, mayonnaise and hot sauce.  Mix together until fully combined.
  3. Serve chicken salad in the lettuce leaves and enjoy. (Or serve with crackers as a snack or appetizer)

    * 2 Tablespoons of Frank’s Red Hot hot sauce adds lots of flavor and a small amount of heat.  If you like more heat, you can add more to the mix or on top. Adjust to your taste.
