I really enjoy cooking and getting creative in the kitchen, when I have time. But, on busy evenings when I’m rushed to pull something together because the whole family is hungry, right now, cooking is less fun and more stressful. That’s why my slow cooker can make life so much easier. As a family, we do Tae Kwon Do together in the evenings 2-3 nights a week. I’ve had a number of people ask me lately, “What do you do for dinner after class?” And this is it, at least once a week, often twice, I make a slow cooker meal. Then, dinner is ready to eat as soon as we come home.
This pork loin slow cooker recipe is a cinch to put together. In a bowl simply mix together the juice and zest of 1 lemon, season salt, Italian seasoning, ground mustard, tarragon, granulated garlic, and onion powder. Pour the lemon herb mixture over the pork loin in the slow cooker, turn the cooker on, and you’re done.
Tarragon is a lovely herb I’ve been using more and more lately. It has a subtle licorice/anise flavor and smell, but it’s not overpowering. If you don’t have any tarragon in your spice cupboard, just double the amount of Italian Seasoning. You’ll still have a great tasting pork loin.
Let the pork loin cook all day on low; it will turn out very tender. When it’s time to eat, simply remove the pork and slice it, as best as you can. When serving, drizzle the meat with some of the pan juices for even more lemon herb flavor in every bite.

Ingredients
- Boneless Pork Tenderloin (2.5-3 lbs)
- Juice and Zest of 1 Lemon
- 1 tsp Season Salt
- 1 tsp Italian Seasoning
- 1/2 tsp Ground Mustard
- 1 tsp Tarragon
- 1 tsp Granulated Garlic
- 1/2 tsp Onion Powder
Directions
- Place the pork tenderloin in the bottom of your slow cooker.
- In a small bowl, mix together the remaining ingredients.
- Pour the lemon herb mixture over the pork loin. Put the lid on the slow cooker and cook on low all day, about 8 hours.
- When you’re ready to eat, removed the pork tenderloin from the slow cook and slice. Serve topped with the lemon herb sauce as desired. Enjoy.
