Sometimes you just need some cheesy, delicious comfort food. But, you don’t want all the carbs, usually pasta or bread, that go with it and often make you feel bad later. Tender cauliflower topped with a creamy cheese sauce is the perfect combination of cheesy comfort and low carb.
The key to making the cauliflower perfectly tender, is to pre-steam it. You only want to steam the cauliflower florets for 5 minutes, any longer and they will end up mushy. I use a pot with a steamer insert. Leave the lid off until the water starts boiling and you can see the steam. Then put the lid on and set your timer. This way you can control exactly how long the cauliflower steams for.
Easy Keto Cheese Sauce
The cheese sauce is made with a few simple ingredients and is very similar to making a fondue. You can use any kind of shredded cheese you want depending on the cheesy flavor you’re going for. I used a combination of Cheddar and Monterey Jack and the cream cheese makes it extra creamy. There’s also chicken stock (or vegetable stock of you want), ground mustard, salt and a dash of hot sauce to enhance the flavor. The hot sauce doesn’t make it spicy but you can add more or omit it if you want.
While the cauliflower is steaming, make the cheese sauce in a separate pot. Warm up the stock, cream cheese and hot sauce over medium heat. Once the stock starts getting warm, begin whisking in the cream cheese until it’s melted and fully incorporated.
Into the melted cream cheese mixture, whisk in the ground mustard and salt to make sure there’s no clumps. Finally, start adding in the shredded cheese a little at a time, whisking until fully melted and incorporated. Continue until you’ve added 1.5 cups of shredded cheese. Remove the cheese sauce from the heat after all the cheese is melted.
Once the cheese sauce is made and the cauliflower is cooked, it’s time to put together your Cheesy Cauliflower Bake. Gently toss the steamed cauliflower in the cheese sauce and put it in the baking dish. Top with more shredded cheese and bake for 20 minutes until the sauce is bubbling and the cheese is melty.

Ingredients
- 1 Head of Cauliflower
- 2 Cups Shredded Cheese, divided
- 1 Cup Chicken Stock or Vegetable Stock
- 4 Tbsp Cream Cheese
- 2-3 Drops Hot Sauce
- 1 tsp Ground Mustard
- 1/2 tsp salt
Directions
- Pre-heat the oven to 350 degrees. Cut the cauliflower into florets. Steam the florets for 5 minutes, and then remove from the heat. Don’t let the cauliflower steam longer than 5 minutes or it’ll turn to mush.
- While the cauliflower is steaming, in a pot over medium heat, whisk together the chicken stock, cream cheese, and hot sauce. Continue mixing the chicken stock mixture until the cream cheese melts. Next, whisk in the ground mustard and salt. Finally, add in 1 1/2 cups shredded cheese a little at a time and whisk continuously until the cheese is melted. Then, remove the cheese sauce form the heat.
- In a square baking dish, pour the cheese sauce over the steamed cauliflower. Toss the cauliflower in the cheese sauce and top with the remaining shredded cheese. Bake for 20 minutes until the sauce is bubbly and the cheese is melted. Enjoy!
