Purple Beans

These beautiful purple beans are from my garden.  They are so fun, and my girls love them because they’re purple. The flowers are also purple when they’re blooming, so they’re are a perfect addition to our garden.  The beans turn green when you cook them, a fun “magic trick” for the kids.

I like to mix up small servings of dressing in lidded containers.  Add ingredients, shake, and done. This time I used a small canning jar but anything with a lid will work. I’ll do this when I’m making myself a salad for lunch too. An easy way to try out new dressing combinations.

Green beans are a favorite vegetable in our house.  The one vegetable that all three kids enjoy, so it’s a go-to on busy nights.  I didn’t have quite enough beans from the garden to feed the whole family, so I added some frozen green beans too.

Easy and delicious, these Green Beans with Red Wine Vinaigrette are a great side with any healthy meal. The red wine vinegar, mustard and garlic really punch up the flavor.

Ingredients

  • 1 1/2 pounds Green Beans, Fresh or Frozen
  • 2 Tbsp Red Wine Vinegar
  • 1 Tbsp Olive Oil
  • 1/2 tsp Season Salt
  • 1/2 tsp Stone Ground or Dijon Mustard
  • 1 Clove Garlic, minced

Topping: Parmesan Cheese (Optional), omit for Dairy-Free

Directions

  1. Trim the ends of the green beans. Steam green beans in a steamer for 7-10 min, to desired doneness.
  2. While beans are steaming, put red wine vinegar, olive oil, season salt, mustard and garlic in a lidded container. Put the lid on and shake until combined.  Set aside.
  3. Once green beans are finished cooking, toss with dressing and enjoy.

    Optional: Top with parmesan cheese.
