Spiedie are delicious cubes of marinated meat – beef, pork, lamb or chicken – grilled on a skewer and served in a roll. Originating in New York, these popular sandwiches have lots of variations. All you have to do is change up the marinade. Spiedie is an easy meal to lighten up. Simply switch out the roll for a lettuce wrap, and you have a healthy flavor-packed meal.

Shake up the Lemon Garlic Marinade

The key to delicious spiedie is in the marinade. You can actually buy bottled spiedie marinade in some stores, but it’s so easy to make your own. For this recipe, we’re making a lemon garlic marinade. First, add canola oil and fresh lemon juice to a mason jar. Then, add crushed garlic, salt, ground mustard, ground pepper and worcestershire. Put the lid on the jar, and shake to combine all the ingredients.

Cube and Marinate the Chicken

The next step is to prepare the chicken. So, cut up boneless, skinless chicken breast into cubes. Then, put the chicken cubes into a zip top bag, and pour half of your prepared marinade over the top. Save the rest of the marinade for later. Finally, remove all the air from the bag of chicken, and close the top. Move the chicken around inside the bag to make sure its all covered in marinate. If you don’t have a lot of time, you can marinate the chicken for a few hours, but really it’s best to marinate overnight. You could also freeze the chicken at this point. Make up a bunch of marinated chicken packets for easy meal prep.

Grill the Chicken Spiedie and Enjoy

Once your chicken is marinated, thread the cubes onto wood skewers that have been soaking in water. Grill the chicken over medium heat, about 2-3 minutes per side until it’s caramelized on the outside and cooked on the inside. Serve the grilled spiedie inside a lettuce wrap with shaved Parmesan cheese and a drizzle of the lemon garlic dressing. Make it a meal and serve jicama fries on the side.

Ingredients

  • 4 Chicken Breast, about 2 Pounds
  • 1 Cup Canola Oil
  • 3 oz Fresh Lemon Juice
  • 3-4 Garlic Cloves, crushed
  • 1/2 tsp Salt
  • 1/4 tsp Ground Mustard
  • 1/4 tsp Ground Pepper
  • Dash Worcestershire
  • Shaved Parmesan
  • Romain Lettuce Leaves

Directions

  1. In a jar, combine the canola oil, lemon juice, crushed garlic, salt, ground mustard, ground pepper and worcestershire. Put the lid on the jar and shake vigorously until combined. Set the dressing aside.
  2. Cube up the chicken breast and place it in a zip top bag.  Add 1/2 cup of the dressing to the chicken. Seal the bag, removing all the air. Toss the chicken around in the bag making sure all the pieces are coated in dressing. Marinate the chicken in the refrigerator overnight. You can also freeze the chicken in the marinade for easy meal prep.
  3. While the chicken is marinating, soak wooden skewers in water for at least 30 minutes. When your ready to start cooking, heat a grill pan over medium heat. Fill the soaked skewers with the marinated chicken cubes.
  4. Grill the chicken skewers on both sides until the chicken is done in the middle, about 2-3 minutes per side.
  5. Serve the chicken skewers with romaine lettuce leaves, shaved parmesan cheese, and the remaining dressing.
  6. To make a lettuce wrap, fill a lettuce leaf with the grilled chicken spiedie. Top with parmesan and drizzle with dressing as desired. Enjoy.
