Summer is upon us. One of our favorite activities is camping. Between the bike riding and reading, hiking and games, and the evenings around the campfire, the whole family gets so excited when we’re preparing for our next outdoor adventure. Part of the preparations is the meal planning, and these chicken and vegetable packets are one of our favorites. Everyone gets to fill their packet with whatever they want (and leave out what they don’t).
Making the meal is part of the experience. The kids love helping in the kitchen, and they really like it when they get to choose what they’re eating. Everyone gets involved, and makes their own packet “just right”. On this trip the kids wanted to help me take pictures too. So, my youngest got a picture of the dog wishing and hoping for some food to drop. It’s all part of the fun.
Set up a Packet Making Station
Making these packets is so easy. First, prep skinless chicken breast by cutting it into bite-sized cubes. Second, prepare your vegetables. Here there is asparagus cut into thirds and one onion cut into petals. Buy pre-sliced mushrooms and a bag of prepared broccoli, cauliflower, and baby carrots to really reduce the prep. Not only does this save time, it also saves space when packing the food for the trip. The beauty of this meal it you can pick whatever vegetables you want. Buy veggies your family enjoys and the ones that are the freshest at the grocery store. Note: if you use potatoes, they take a lot longer to cook, so I recommend partially pre-cooking them first in a microwave or oven.
Once you have the chicken and vegetables prepared, set up a packet making station. Lay out the chicken with tongs and the vegetable options. Also include some olive oil, season salt and garlic powder to season the food with. Then, let the family have fun making their individual packets. On top of a large piece of foil, layer the vegetables and chicken. Drizzle with olive oil and season as desired. Place a second piece of foil on top of the food. Finally, fold up all the sides to make a sealed packet. It helps to label the packets with a permanent marker to know who’s is who’s later.
Cook the Packets on a Grill, Fire, or in an Oven
As soon as the foil packets are ready, you can cook them. There are many options for cooking the chicken foil packets. A table top camping grill (above) works great. You can cook them over an open fire, too, in the fire pits that have a grill over the top. Once your fire or grill is hot, cook the packets for about 20-30 minutes until the packets puff up and the chicken is cooked through. You can easily make these chicken and vegetable foil packets at home in your outdoor grill or in the oven (at 425°).
Once the packets are cooked, open them carefully. There will be a lot of steam. It’s easiest to cut open the top piece of foil instead of trying to unroll the sides of the hot foil. Eat right out of the packet (on top of a plate) or dump the seasoned chicken and vegetables onto plates. With the chicken already cut up, it’s easy for everyone to enjoy their meal around the campfire. There’s no need to try cutting chicken in your lap. All you need is a fork, and you’re ready to make some fun memories.
Individual Vegetable and Chicken Foil Packets: Grill & Campfire

Ingredients
- 4 Chicken Breast, Cubed (about 1.5 pounds)
- Olive Oil
- Season Salt and Garlic Powder to taste
Assorted Vegetables (Suggestions)
- 1 Bunch Asparagus (about 1 pound)
- 1 Onion
- 4 oz Sliced Mushrooms
- 8 oz Baby Carrots
- 8 oz Broccoli and Cauliflower Florets
Directions
- Cut the chicken breast into cubes. Cut the onion into petals. Trim the asparagus and cut into 2 inch pieces. Cut broccoli and cauliflower if necessary.
- On 4 sheets of foil, divide the vegetables and chicken evenly. (Or let everyone make their own packet to their liking). Drizzle each packet with olive oil (about 1 teaspoon each) and season with season salt and garlic powder to taste.
- Put a second piece of foil on top of each packet. Fold up the foil 2-4 times on all sides to make a sealed packet.
- Place the packets on a grill or over a fire for 20 – 30 minutes until the foil puffs up and the chicken is cooked through. Carefully open the packets onto plates; there will be a lot of steam when you open them. Serve and enjoy.
