When it comes to weeknight meals, one pan meals are a great way to feed your hungry family fast. I love them because they’re easy to make and easy to clean up. After a long busy day, the last thing I want to do is spend my time cleaning up the kitchen. Chicken and broccoli are a great combination. Add in a creamy garlic sauce and some fresh lemon and you have one tasty meal.

Sautéd Chicken Breast Strips

Sauté Sliced Chicken Breast

Start your one pan meal by heating up a large skillet over medium heat. Slice chicken breast into strips and season with salt and granulated garlic. Once your pan is heated up, add in olive oil and the seasoned chicken breast. Cook the chicken, stirring occasionally, until it is browned and cooked through. It takes about 10 minutes. To make the meal even faster, cut the broccoli into florets while the chicken is cooking, or buy a bag of pre-cut broccoli. Also zest one lemon.

Steam the Broccoli

After the chicken is fully cooked, remove it from the pan so it doesn’t overcook. Now, add the broccoli to the pan along with half a cup of water. Put the lid on the pan and steam the broccoli 4-5 minutes until its tender crisp. While the broccoli is steaming, mince or crush 3-4 cloves of garlic.

Make the Garlic Cream Sauce

After the broccoli is done steaming, remove it from the pan. Now it’s time to create your garlic cream sauce. This cream sauce is similar to the sauce in Creamy Garlic Chicken and Zoodles. Add 2 tablespoons of olive oil to your skillet. Then, add in the crushed garlic. Sauté for about a minute, until the garlic is fragrant. Immediately add one cup of heavy cream to the pan to prevent the garlic from burning.

When you first add the cream, the sauce will be separated. Use a whisk to get all the cooked bits off the bottom of the pan. Simmer your sauce, while whisking, and it will come together into a creamy, silky sauce. It takes about 5 minutes.

Put Everything Together

As soon as your creamy garlic sauce comes together, add the chicken and broccoli back to the skillet. Stir to cover the chicken and broccoli in the sauce and cook another minute or so to rewarm the ingredients. Finally, remove the pan from the heat. Stir in the lemon zest and squeeze fresh lemon juice on top. Serve with more lemon as desired.

Ingredients

  • 4 Chicken Breast, About 1.5 Pounds, Sliced
  • 3 Tbsp Olive Oil, Divided
  • 2 tsp Season Salt
  • 1 Tbsp Garlic Powder
  • 3-4 Cloves Garlic, Crushed
  • 1 Lemon
  • 6 Cups Fresh Broccoli Florets
  • 1/2 Cup Water
  • 1 Cup Heavy Cream

Directions

  1. Slice chicken breast into strips. Season the chicken strips with season salt and garlic powder.
  2. Heat a large skillet on the stove over medium heat. Add 1 tablespoon of olive oil and seasoned chicken to the pan. Sauté chicken strips until brown, stirring occasionally, about 10 minutes.
  3. While the chicken is cooking, cut broccoli if needed, zest the lemon and prepare the cloves of garlic.
  4. Once the chicken is cooked, remove it from the pan and set aside. Add the broccoli to the pan along with 1/2 cup water. Put the lid on the pan and steam the broccoli for 4 minutes until tender crisp.
  5. Remove the cooked broccoli from the pan and set aside. Add remaining 2 tablespoons of olive oil to the pan and the crushed garlic. Sauté garlic until fragrant, about 1 minute. Add the heavy cream to the pan. Simmer while stirring until the sauce comes together about 5 minutes. 
  6. Add the chicken and broccoli back to the pan. Toss everything together. Cook for another minute to rewarm the chicken and broccoli.
  7. Remove from the heat and stir in the lemon zest. Squeeze lemon juice over the top and serve. Enjoy.
