Salmon Fillets and Almond Flour

Salmon meunière is one of those dishes that sound fancy but is actually really easy. It’s all about simple cooking to enhance the rich flavor of salmon. According to Merriam-Webster, meunière is a French word that literally means “in the manner of a miller’s wife.” And what did the miller do? Well, the miller’s job was to grind grain into flour using a mill. I suspect the miller and his wife had a lot of flour, which brings us back to salmon meunière. It is salmon coated in flour and sautéed in butter. Simple and delicious. Of course you can really cook all kinds of fish a la meunière.

Traditionally, fish served a la meunière is dredged in wheat flour. But to get rid of those unnecessary carbs, I made my favorite flour substitution, almond flour. Preparing your salmon is really easy. First, put some almond flour on a plate and season the fillets with salt and pepper. Second, coat the seasoned salmon fillet in the almond flour. Press the fillet in the flour, turn over and repeat. Then, shake off the excess almond flour, so there’s only a light coating.

Butter in Skillet and Salmon

Sauté in Butter

After all your salmon in dredged in the almond flour, heat up a skillet over medium low heat. Melt a couple tablespoons of butter in the pan. Once the butter is melted, swirl it around to coat the whole pan. Then, add the salmon to the pan.

Easy Salmon Meuniere

Sauté the salmon for 3-4 minutes until the crust is golden. Flip the salmon and repeat. If there’s not enough room in your pan for all the salmon filets, keep the cooked salmon warm on a plate while sautéing the next batch. Once all of the salmon meunière is cooked, serve with fresh lemons. That’s it; three steps and you have rich, delicately seasoned salmon. Perfect for a meal any night of the week.

Ingredients

  • 2 lbs Skinless Salmon Filets
  • 3/4 Cup Almond Flour
  • 2 Tbsp Butter
  • Salt and Pepper
  • Lemon for Serving

Directions

  1. Put the almond flour on a plate. Season the salt with salt and pepper. Dredge the salmon filets in the almond flour, coating both sides. Shake off the excess.
  2. Heat a large skillet over medium-low heat. Melt the butter in the pan.
  3. Sauté the salmon filets until the crust is golden. 3-4 minutes. Turn over the salmon and sauté the second side until golden.
  4. Remove the salmon from the pan. Serve with lemon and enjoy.
