Some days call for good Chinese take-out. Egg rolls are tasty and fun to eat. Even the kids like them. I’ve made homemade egg rolls, and it takes quite a bit of time. Besides that, the fried wrappers aren’t the healthiest choice. These unstuffed egg rolls are quick and easy to make, and you feel good after you eat them. Whip up the delicious filling all in one pan. Then, fill up your lettuce wrap, and add your favorite toppings. Enjoy healthy, delicious Chinese food in the comfort of your home.

Homemade Sweet & Sour Sauce

Egg rolls always come with a great sauce for dipping or drizzleing. You could use your favorite store bought sauce. Or, make your own sweet and sour sauce. This recipe has no sugar added. In a small sauce pan, whisk together a small can of tomato paste, apple cider vinegar, soy sauce (or liquid aminos), and a cup of water. Then, add a little garlic powder and your favorite sugar free sweetener (like Swerve). Finally, simmer the sauce uncovered for fifteen to twenty minutes. This recipe will make about two cups, so you’ll probably have extra. Store the sauce in the refrigerator after it cools. If you want cooled sauce on the egg roll lettuce wraps, make the sauce earlier in the day. Or, use the sauce when it’s warm. It’s good both ways.

One Pot Egg Roll Filling

The unstuffed egg roll filling comes together pretty fast. So, start by preparing all your ingredients. First, shred about two cups of cabbage. Then, grate or finely chop some carrots. For quicker prep, buy some matchstick carrots. Lastly, crush or mince a couple garlic cloves. You’ll also need: soy sauce (or liquid aminos), sesame oil, apple cider vinegar and onion powder.

Start by Browning Ground Pork

Once all of your ingredients are ready, start cooking by browning ground pork in a sauté pan. Next, add in the cut carrots. Stir the carrots in, and let them soften for a couple minutes. Then, stir in the shredded cabbage, and let it cook for a minute. Finally, stir in the crushed garlic, soy sauce (or liquid aminos), sesame oil, apple cider vinegar, and onion powder. Cook, stirring occasionally, for about five minutes to let all the flavors come together.

Serve with Toppings and Sauce

While your egg roll filling cools for a couple minutes, get the lettuce and toppings ready. Romaine hearts are my favorite for lettuce wraps. Cut or break off the ends and separate the leaves. Then, put out some fun toppings. We like sesame seeds and green onions or chives and of course the homemade sweet and sour sauce. I like to put everything in the middle of the table. Then, everyone can make their egg roll lettuce wraps just as they want. These unwrapped egg rolls make a fun meal on their own or as part of an asian themed meal. They also make a tasty appetizer.

Ingredients

  • 1 lb Ground Pork
  • 2 Cups Shredded Cabbage
  • 1 Cup Carrot Matchsticks
  • 4 Garlic Cloves
  • 3 Tbsp Soy Sauce or Liquid Aminos
  • 3 Tbsp Apple Cider Vinegar
  • 2 Tbsp Sesame Oil
  • 1 tsp Onion Powder
  • Romaine Lettuce Leaves
  • Optional: Chives and Sesame Seeds for serving

Sweet and Sour Sauce (Makes about 2 Cups)

Directions

  1. In a small saucepan, whisk together all the sauce ingredients. Bring the sauce to a simmer over medium-high heat. Then, reduce the temperature on the stove to low. Simmer the sauce for 15-20 minutes, and let it cool.
  2. Cut the carrots into matchsticks, shred the cabbage, and crush the garlic.
  3. Cook the ground pork in a sauté pan over medium heat. Break up the meat as it cooks and let it brown, about 8 minutes.
  4. When the pork is fully cooked, add the carrots to the pan. Stir in the carrots and let them soften, about 2 minutes.
  5. Stir in the shredded cabbage, and let it cook about a minute. Then, add the crushed garlic, soy sauce, vinegar, sesame oil and onion power to the pan. Stir everything together. Cook, stirring occasionally, for 5 minutes.
  6. Serve the egg roll filing inside the romaine lettuce leaves topped with sweet and sour sauce, chives and sesame seeds as desired. Enjoy.
