A light and healthy springtime recipe, this asparagus frittata is filled with caramelized ham and creamy goat cheese, perfect for a special brunch.
Springtime is here, which means new fruits and vegetables are coming into season. It’s also the time of year when we start looking for ways to lighten up our meals. Asparagus is a delicious springtime vegetable, and one of my favorites too. If you’re looking for a light and healthy recipe, this ham and asparagus frittata is a great choice. The caramelized ham and fresh asparagus go wonderfully with the creamy, tangy goat cheese. This springy recipe is ideal for brunch, and we love to have it for brinner (breakfast for dinner) too. It’s also a fun and easy one to bring to a potluck, perhaps for Easter or Mother’s Day.
Trim the Asparagus and Cube the Ham
There isn’t a lot of prep for this asparagus frittata. First, cut a ham steak into half-inch cubes. Then, trim the tough ends off the asparagus, and throw them away.
When you’re choosing asparagus at the grocery store, look for firm stalks that are smooth and stand up straight. You don’t want stalks that are limp, wilted, or shriveling up. The best way to trim asparagus is by snapping off the tough ends with your hands. This video demonstrates the easy process.
Cut the Asparagus
After you’ve thrown away the tough ends of the asparagus, it’s time to cut up the rest of the stalks. First, cut off the tops of the asparagus. Then, cut the remaining stalk into one inch pieces. The asparagus tips will be used to decorate the top of the frittata.
Sauté the Ham and Asparagus
The next step is to sauté the ham and asparagus. So, add some olive oil to an oven-safe frying pan. Then, toss in the cubed ham and cut up asparagus. Sauté until the ham is caramelized and the asparagus is tender.
Season and Whisk the Eggs
While the asparagus and ham are cooking, prepare the eggs. First, crack eight eggs into a mixing bowl. Add milk, salt, pepper, and garlic powder to the bowl. Then, whisk everything the eggs until they are nice and airy.
Build the Frittata
Once the ham and asparagus have finished cooking, remove the asparagus tips from the pan. Then, arrange the remaining ham and asparagus pieces evenly in the bottom of the pan. Next, pour the egg mixture in the pan.
Now that the seasoned eggs are in the frying pan, arrange the reserved asparagus tips on top of the eggs in a decorative manner. I pointed all the tips to the center of the pan. You can skip this step if you want, but pretty food is fun to eat. Finally, sprinkle crumbled goat cheese over the top of the everything.
Bake the Frittata
As soon as all the ingredients are in the pan, it’s time to bake the frittata. Move the whole pan to the oven and bake for about twenty minutes at 350°. The frittata is done when the eggs are set in the middle. To check the eggs, grab the handle, while using an oven mitt, and give the pan a little shake. If the eggs are jiggly, they’re not done yet.
Add More Goat Cheese and Serve
When the frittata is fully cooked, remove it from the oven. Then, run a spatula around edge of the pan to release the frittata. Carefully slide the frittata onto a cutting board or serving platter. Cut the asparagus frittata into slices, add more goat cheese on top, and enjoy.

Healthy Ham and Asparagus Frittata Recipe with Goat Cheese

Ingredients
- 8 oz Ham Steak
- 1/2 lb Asparagus
- 8 Eggs
- 1/4 Cup Milk
- 2 oz Crumbled Goat Cheese, divided
- 1 Tbsp Olive Oil
- 1/2 tsp Salt
- 1/4 tsp Garlic Powder
- 1/4 tsp Ground Pepper
Directions
- Preheat the oven to 350°. Cut the ham steak into 1/2 inch cubes. Trim the asparagus, and throw away the tough ends. Cut the tips off the asparagus, and cut the remaining stalks into 1 inch pieces.
- Heat an oven-safe frying pan on the stove over medium heat. Add the olive oil to the pan along with the cubed ham and cut up asparagus. Sauté the ham and asparagus until the ham is caramelized and the asparagus is tender, stirring occasionally.
- While the ham and asparagus are cooking, whisk together the eggs, milk, salt, pepper and garlic powder. Set the egg mixture aside.
- When the ham and asparagus are finished cooking, remove the asparagus tips from the pan and set aside. Evenly distrusted the ham and remaining asparagus in the frying pan. Pour the egg mixture over the top. Arrange the asparagus tips on top of egg mixture creating a pattern as desired. Sprinkle half of the goat cheese on top of the egg mixture.
- Put the frying pan in the oven. Bake the frittata at 350° for 20 minutes or until the eggs are set in the center.
- When the frittata is fully cooked, run a spatula around the edges of the pan to loosen the frittata from the pan. Carefully slide the frittata out of the pan onto a cutting board or serving platter. Sprinkle the remaining goat cheese on top of the frittata, slice, and serve.
