We love tacos in our house, and fish tacos are a big favorite. I have fun playing with the toppings and coming up with new ideas. The ling cod for these fish tacos came from one of our family fishing trips. Our guide on the trip did all the filleting for us, so they were ready to take home and freeze. This recipe would also taste great with skinless cod fillets from the grocery store or any other mild flavored fish. The special addition to these tacos is a fresh avocado sauce. It’s so easy to whip up. You can do it while the fish are cooking, making this recipe even faster. We love these ling cod fish tacos because they’re quick, easy to make and full of flavor.

Make a Quick Chili Lime Seasoning

The homemade seasoning for the ling cod is super easy to make. You only need four ingredients: a lime, season salt, chili powder, and ground coriander. First, zest the lime, and add the zest to a small bowl. Then, add in the other seasonings, and mix it all together.

Prep the Ling Cod

While the oven is heating up, spread out your fish on a baking sheet. Then, use a pastry brush to brush olive oil all over both sides of the fillets. Next, cut the lime in half that you zested earlier. Squeeze fresh lime juice over all the cod fillets.

Finally, sprinkle the chili lime seasoning over the top of all the fish. Bake them for twenty minutes at 425°. The fish is finished cooking when the color is opaque and it flakes easily with a fork.

Fresh Avocado Sauce

While the fish is cooking make up this easy avocado sauce. All you need to do is gather up the ingredients, and add them to a food processor. You’ll need one avocado, one bunch of fresh cilantro, the juice and zest of one lime, salt, olive oil and water. Then, puree the sauce until it’s smooth. Add extra water as necessary, a little at a time, until the avocado sauce reaches the consistency you like.

Set Up a Taco Bar and Enjoy

Once the sauce is made, get out all your other taco filling ingredients. I like to set up a taco bar, so everyone can make their tacos the way they like. For fillings I suggest shredded cabbage, shredded cheese and diced tomatoes. Fill up your taco with your favorite fillings and the ling cod. Then, top it with the avocado sauce and enjoy. There are a variety of low carb tortilla options on the market for making low carb tacos. Another great alternative is to make a taco salad, and use the avocado sauce as a dressing.

Ingredients

  • 1.5 lbs Ling Cod Fillets, skinless
  • 1 Cup Shredded Cabbage
  • 2 Roma Tomatoes, diced
  • 1/2 Cup Shredded Cheese
  • 1 Avocado
  • 1 Cup Fresh Cilantro
  • 2 Limes
  • 1/2 Cup Water
  • 1/2 tsp salt
  • 3 Tbsp Olive Oil, divided
  • 1/2 tsp Season Salt
  • 1/2 tsp Chili Powder
  • 1/4 tsp Ground Coriander
  • Low Carb Tortillas

Directions

  1. Preheat the oven to 425°. In a small bowl, combine the season salt, chili powder, coriander, and the zest of 1 lime. Mix the seasoning together and set aside.
  2. Place the fish fillets on a baking sheet. Brush the fillets, on both sides, with 1 tablespoon of olive oil using a pastry brush. Squeeze fresh lime juice over the fish and season with the seasoning mix from step 1. Bake the fish for 20 minutes.
  3. While the fish is cooking, make the avocado sauce. To a food processor, add the avocado, cilantro, juice and zest of 1 lime, salt, 2 tablespoons olive oil, and water. Process until the sauce is smooth. Add more water if necessary to reach desired consistency.
  4. When the ling cod is finished cooking, remove it from the over. Build your tacos with low carb tortillas, shredded cabbage, shredded cheese, and diced tomatoes as desired. Place the ling cod on top and drizzle with the avocado sauce. Enjoy.
