This recipe is a family favorite. Summer is officially here when we’re grilling outside. And, one of our most favorite grilled sides is asparagus cooked in a foil packet. It’s really easy and tasty to grill vegetables in foil. Sometimes I’ll make up packets filled with a variety of vegetables. If just depends on what looks good at the grocery store. Asparagus on the grill is always delicious. The asparagus is seasoned simply with olive oil and season salt and cooked until they are tender crisp to enhance the fresh flavor. The spears on the bottom of the packet get a little extra roasted too. These ones are my favorite.

Choosing and Prepping Asparagus

When you’re shopping for asparagus, looks for bright green spears. They should be firm. Check the cut ends too. Make sure they are not dry or shriveled up. When prepping asparagus, trim the cut ends. You could do this with a knife, but it’s better to do it by hand to make sure you remove all the tough stalk. One spear at a time, grip the asparagus in both hands near the end. Press with your thumbs until it snaps. The asparagus spear will naturally break above the fibrous part.

Season the Asparagus

Once you have all the asparagus trimmed, arrange them in the middle of a large piece of foil. Drizzle the asparagus with olive oil and season with season salt or salt and pepper.

After the asparagus is seasoned, cover the spears with a second large piece of foil. Fold the edges repeatedly on all four sides to create a sealed packet. This will ensure that all the asparagus will steam inside.

Grill the Asparagus

Once your asparagus is all wrapped up, it is ready for the grill. You can use a gas or charcoal grill or even cook the asparagus over a fire pit with a grill. If you’re grilling a whole meal, the asparagus will usually take longer to cook than the meat. So start by placing the foil packet over direct heat for 10 minutes. Then, move the asparagus to a spot with indirect heat while you’re cooking the rest of your meal (about 10 more minutes).

Open the foil packet carefully. Cut open the top piece of foil instead of unrolling the sides. There will be a lot of steam. Toss the asparagus in the seasoning. Serve and enjoy.

Ingredients

  • 2 Bunches of Asparagus, about 2 lbs
  • 2 Tbsp Olive Oil
  • 1/2 tsp Season Salt

Directions

  1. Trim the ends of the asparagus spears.
  2. Put all the trimmed asparagus on a large piece of foil. Drizzle with olive oil and season with season salt.
  3. Put a second piece of foil on top of the asparagus. Fold up all the sides to make a secure packets (roll at least 3 times, more if possible).
  4. Heat up your grill. Put the foil packet over direct heat on the grill for 10 minutes. If your grilling something else, move the asparagus to indirect heat while cooking the rest of your meal. (otherwise another 5 minutes or so over direct heat)
  5. Carefully open your foil packet by cutting open the top piece of foil (there will be steam). Toss the cooked asparagus in the seasoning. Let cool a few minutes. Serve and enjoy.
