Let’s talk about crackers. They are great when you need a quick snack out the pantry. Sometimes you just want something crunchy and salty. Ever since we made a conscious effort at our house to cut out extra carbohydrates and sugars, we haven’t had any crackers in the pantry. We have other snack options that keep us satisfied, mostly. But sometimes I still want crackers.

There aren’t many, if any, low carb cracker options available at the grocery stores. So I set out to try to make some. I wanted this recipe to be simple because who wants to spend all day making crackers? And, I love that I know exactly what’s in them. Almond flour has become my favorite white-flour alternative. I find it the easiest to work with. These Keto crackers turned out great. They are crunchy, a little salty, and sturdy enough to do some dipping.

Almond Flour Dough

This Keto Crackers Recipe is made with almond flour, egg, olive oil, and salt. To begin with, simply mix together almond flour, olive oil and one egg. Combine in a bowl until a dough forms. Then, make the dough into a ball, and put it on a silicone baking mat.

In this case, I like to make the crackers on the silicone baking mat because I know it fits in my my half sheet baking pan. You could also use parchment paper. Cut the paper to the size of your pan so you don’t roll out the dough too thin. Press your dough flat on the baking mat. Then, put a sheet of parchment paper on top and roll out the dough with a rolling pin.

Roll the cracker dough to the edges of your baking mat (or as close as you can). It’ll be really thin, maybe 1/16th of an inch. But, don’t worry, they’ll come out sturdy enough for dipping. When the dough is all rolled out, sprinkle the kosher salt on top of the dough. You can even put the parchment paper back on top to press the salt into the dough.

Cut into Crackers with a Pizza Cutter

Finally, use a pizza cutter to slice the dough into crackers. As you can see, the lines weren’t perfectly straight, but that’s ok. I ended up with about 54 Keto crackers, about 2″ x 1.75″. You can cut yours as big as you like.

After that, bake the crackers at 350º for 18-20 minutes until golden. These simple Keto crackers come out of the oven separated and ready to eat. Store any extras in an air-tight container.

I was inspired to make these crackers because I made a Buffalo Chicken Dip. I wanted a low-carb cracker option for dipping and these are perfect. Low-carb, Keto crackers, and I know exactly what’s in them.

Ingredients

  • 1 Cup Almond Flour
  • 1 Egg
  • 1/2 tsp Kosher Salt
  • 1 Tbsp Olive Oil

Directions

  1. Pre-heat oven to 350º.
  2. In a bowl, combine the almond flour, egg and olive oil. Mix until a dough forms.
  3. Put the ball of dough on a silicone baking mat (half sheet size) or a piece of parchment paper cut to 16″ x 12″. Place a piece of parchment paper on top of the dough. 
  4. Roll out the dough using a rolling pin, almost all the way to the edges of the silicone mat. The dough will be really thin, about 1/16th of an inch thick. Sprinkle the dough with the kosher salt.
  5. Using a pizza cutter, cut the dough into squares. Mine we’re about 2″ x 1.75″ giving me about 54 crackers.
  6. Bake at 350º for 18-20 minutes until golden. Store in an air-tight container.
