Shrimp, Shrimp, Shrimp!! I love shrimp. They are by far my favorite seafood, and shrimp is so easy to make at home. Somehow, when you add shrimp to a dish, it just seems that much more special. I like all kinds of tacos, but if shrimp tacos are an option, I’m in!!
Roasting shrimp in the oven is super simple and a great way to cook a lot of shrimp at once. For our taco night, I wanted to jazz things up a bit. I saw the clementines in the fridge (perfect for kids lunches) and thought citrus marinated shrimp. It is a fun new twist on a family favorite.
Simple Citrus Marinade
The shrimp don’t need to marinate long. Start with the marinade first and let the shrimp sit while the oven heats up and you get you other taco toppings ready. First, combine the juice and zest of one clementine and half a lime in a bowl. If you don’t have any clementines, you can always use an orange instead. Add in olive oil and salt to the shrimp marinade. Then, remove the tails from the shrimp and toss them in the marinade.
Next, pre-heat the oven to 425º. Let the shrimp marinate while the oven is pre-heating. When the oven is ready, spread out the shrimp on a sheet pan lined with parchment paper. Roast the shrimp for 8-10 minutes until they’re pink and opaque.
After the shrimp are cooked, it’s time to build your tacos or taco salad. You might like: Lime and Cilantro Coleslaw, Refried Black Beans, and Pico de Gallo.

Ingredients
- 20 oz Large Raw Shrimp, Thawed
- 1 Clementine, Juice and Zest (or about 1 Tbsp Orange Juice)
- Juice and Zest of 1/2 a Lime
- 1 1/2 tsp Salt
- 1 tsp Olive Oil
Directions
- In a bowl, combine the juice and zest of the clementine and half a lime. Add in the salt and olive oil and stir to combine.
- The the tails off the shrimp and add them to the bowl of marinade. Toss the shrimp in the marinade and let them sit 10 minutes while the oven heats up. Pre-heat the oven to 425º.
- Once the oven has pre-heated, spread the shrimp out on a sheet pan covered in parchment paper.
- Roast the shrimp for 6-8 minutes until they are pink and opaque.
