Whenever I see Florentine on a menu, I automatically think spinach. As it turns out, most dishes served a la Florentine include spinach, a cream sauce and often cheese. However, Florentine dishes do not originate from the city of Florence, Italy, as the name might suggest. A la Florentine is actually a French style of cooking. Interestingly, research suggests that Queen Caterina de’ Medici from Florence brought spinach seeds with her when she married the King of France.
This one pan Florentine dish has all the important components: fresh spinach, a luscious cream sauce and cheese. Sautéed chicken and cauliflower rice round out the dish to make a wonderful one pot meal. Perhaps my favorite part of a one pot meal, one pan means less dishes. Ready in 20 minutes, this One Pan Chicken Florentine Recipe is a great option for lunch or dinner.
Start by Sautéing the Chicken
Begin making your meal, by heating olive oil in a large pan. Season the chicken breast strips, and sauté them in the olive oil until they have browned. Remove the cooked chicken from the pan. This lets the juices redistribute and prevents the chicken from getting over-cooked and chewy.
Next, add cauliflower rice, chicken stock and crushed garlic to the pan. Stir together and let the cauliflower rice start to cook. After 2-3 minutes, add in fresh spinach. Stir in the spinach and let it wilt. Then, add cream cheese and a bit of heavy cream to the pan. Stir everything together and let it cook for a few minutes until the cream cheese is melted and well-incorporated.
Finally, add the cooked chicken back to the pan along with parmesan cheese. Mix everything together and let it simmer for a few minutes. The sauce will thicken up and become even more creamy. When the sauce has reduced enough, serve up your One Pan Chicken Florentine with fresh spinach.

Ingredients
- 1 1/2 Pounds Chicken Breast, cut into strips
- 1 Tbsp Olive Oil
- 4 Cups Cauliflower Rice
- 1 tsp Garlic Powder
- 1 tsp Season Salt
- 1/2 Cup Chicken Stock
- 2 Cloves Garlic, crushed
- 6 oz Fresh Baby Spinach
- 1/4 Cup Heavy Cream
- 4 oz Cream Cheese
- Salt and Pepper to Taste
- 1/2 Cup Parmesan Cheese
Directions
- Heat olive oil in a large pan over medium-high heat. Mix together the garlic powder and season salt. Season the chicken strips with the garlic powder / season salt mixture.
- Sauté the chicken in the pan until brown and cooked through, about 7-10 minutes. Remove the cooked chicken from the pan and set aside.
- Add the cauliflower rice, chicken stock and crushed garlic to the pan. Cook 2-3 minutes stirring occasionally.
- Add the baby spinach to the pan. Stir in with the cauliflower rice until wilted, about 1 minute.
- Add the heavy cream and cream cheese to the pan. Stir in with other ingredients until the cream cheese is melted.
- Add the chicken back to the pan along with the parmesan cheese. Stir everything together and let it simmer for a couple minutes until the sauce is creamy. Serve and enjoy!!
