Sushi bowls are so much fun. They are a great way to get all the delicious sushi flavors at home, but much faster. It takes a lot of time to carefully put together and roll up sushi, but with sushi bowls you can skip that step. These cauliflower rice sushi bowls are great for meal prepping, and they’re low-carb too.
The base of the cauliflower rice sushi bowls is seasoned cauliflower sushi rice. The cauliflower rice only takes about 15 minutes, and the recipe makes 6 cups. The rice keeps well in the refrigerator, so you can make up a batch and have it ready for a quick lunch. Or prep 6 lunches to-go for the week. It’s easy to make a variety of lunches by switching up your sushi bowl toppings.
These sushi bowls are based on a sushi roll called “The Duke,” so they include grilled flank steak. If you’re meal-prepping for the week, grill the steak while you’re cooking the rice. This is also a great time to put a new spin on some leftovers. We eat leftovers often in our house. Turn last nights steak into today’s sushi bowl.

Add some sliced avocado. Finally, drizzle with some yum yum sauce, and add soy sauce and wasabi it you want. Low Carb Cauliflower Rice Sushi Bowls

Ingredients
- 2 Cups Cauliflower Sushi Rice (Recipe)
- 1/3 Cup Imitation Crab
- 4 oz Grilled Flank Steak
- 1 oz Cucumber
- 1 oz Carrots
- 1/2 Avocado, Sliced
- 2 tsp Yum Yum Sauce
- Optional: Liquid Aminos (or Soy Sauce), Wasabi
Directions
- Dice up the cucumber, carrot, steak and imitation crab into bite sized pieces.
- Put the cauliflower sushi rice in the bottom of two bowls (1 cup each).
- Layer the diced cucumber, carrots, steak and crab on top of the cauliflower rice, dividing evenly between the two bowls.
- Drizzle each bowl with 1 tsp of yum yum sauce. Add soy sauce and wasabi as desired. Enjoy!!
