A low carb Lipton onion soup meatloaf recipe made without bread. The whole family will enjoy this easy, comforting meal any night of the week.
Meatloaf is a classic comfort food that brings back memories from my childhood. We ate it quite a bit when I was growing up, and I always loved it. Now I make it for my kids because it’s quick and easy to put together. And it’s one of their favorites too. One year, it was just me and the girls for Valentine’s Day, so I made them heart-shaped meat loaf. I also added heart shaped cucumber slices and beets (because they’re pink) to round out the meal. They really enjoyed it and continue to talk about the meal.
Mix Together the Wet Ingredients
The trick to a tender meatloaf is not over-mixing the meat. So, mix together all the other ingredients first. Start with the wet ingredients. In this case, mix together milk, two eggs, Worcestershire sauce, and tomato sauce. Whisk it all together until the eggs are broken up and throughly mixed together with the other ingredients.
Add the Dry Ingredients
Growing up, my mom would add finely diced onion to the meatloaf. Sometimes I do this too, but adding Lipton Onion Soup mix instead adds so much flavor. It also makes the meal just a little bit quicker to prepare. I’m always looking for ways to make my favorite recipes more low carb, and this recipe is no exception. Swap out the traditional bread or bread crumbs found in meatloaf for almond flour. It doesn’t change the texture of the meatloaf and it fits our low-carb lifestyle. So, mix one packet of soup mix and almond flour in with the wet ingredients. Whisk it all together until it is well combined.
Add the Ground Beef
Once all the other components are mixed together, it’s time to add lean ground beef to the bowl. Mix in the beef until it’s just combined with the other ingredients. Remember not to over-mix it. Transfer the meat loaf mixture to a square baking dish and level it out. Bake at 350° for about 45 minutes until the loaf is pulling away from the edges of the pan and there’s bubbling around the edges.
Let the meatloaf cool for a few minutes. Then, slice and serve. Round out the meal with some cauliflower rice and Green Beans with Red Wine Vinaigrette.
