These easy Hawaiian shish kabobs with chicken, ham and pineapple are coated in a ginger, garlic and soy marinade, with onions and sweet peppers too.
I came up with this recipe because I love grilled pineapple. And whenever I think of pineapple, I immediately think of Hawaii. I added some marinated ham and chicken, with a few more vegetables, and it instantly became a family favorite. Shish kabobs are colorful, appetizing and fun to eat. Everyone gets excited when we have kabobs for dinner. There’s just something special about eating dinner off of a stick.
Make the Garlic Ginger Marinade
The first step in this easy Hawaiian inspired recipe, is to make a quick marinade. First, grate fresh ginger into a bowl along with crushed garlic. Drain the juice from a can of pineapple chunks. Add the juice to the bowl of marinade and save the pineapple for later. Next, add some soy sauce and olive oil to the marinade and whisk it all together.
Cube the Meat
Now it’s time to cut up the meat for the shish kabobs. First, cut up one pound of ham steaks into 1 inch pieces and add them to the bowl of marinade. Second, cube up boneless skinless chicken breast into 1 inch chunks, and add them to the bowl too. Toss the meat in the marinade. Let the meat marinate in the refrigerator for about 30 minutes.
Soak Skewers and Prepare the Vegetables
While the meat is marinating, soak your wooden skewers in water. A shallow baking pan works well for this. Then, cut up bell peppers or the sweet mini peppers into pieces. Also, cut up a red onion. You want everything on the kabobs to be about the same size. Once the meat is done marinating, set up a skewering station. Fill up the skewers that have been soaking with pepper, onion, pineapple, ham and chicken. After you’ve filled all the skewers, brush the marinade on all sides of the kabobs with a pastry brush. It looks pretty to have everything on one skewer, but sometimes it’s easier to load up a skewer with all the same thing. The meat and vegetables often have different cooking times. Having them on separate skewers makes it easier to control the doneness of all the food.
Time to Grill
Heat up your outdoor grill on high. Add the shish kabobs to the grill. Grill over direct heat for 2 minutes, and then turn oven. Grill for an additional two minutes. Then, move the kabobs to indirect heat to finish cooking. The kabobs are done when the chicken is cooked through and the vegetables are cooked to your liking. Usually it takes an additional 3-5 minutes. You could also grill the Hawaiian shish kabobs on an indoor grill pan or roast them in the oven.

Tasty Hawaiian Shish Kabobs: Chicken, Ham and Pineapple

Ingredients
- 2 Chicken Breast, Cubed
- 16 oz Ham Steak, Cubed
- 1 Can Pineapple Chunks (20 oz)
- 1 Red Onion
- 2 Bell Peppers
- 4 Cloves Garlic, Crushed
- 1/4 Cup Olive Oil
- 1 Tbsp Fresh Ginger, Grated
- 2 Tbsp Soy Sauce
Directions
- Drain the canned pineapple and reserve the juice. Set the pineapple chunks aside. In a bowl, combine the reserved pineapple juice (about 3/4 cup), olive oil, crushed garlic, grated ginger and soy sauce.
- Cube the chicken breast and ham steaks into 1″ pieces. Add the chicken and ham to the bowl of marinade. Toss the meat in the marinade and refrigerate for 30 minutes.
- While the meat is marinating, soak wooden skewers in a shallow pan filled with water.
- Cut up the bell peppers and red onion into pieces about the same size as the meat.
- Once the meat is done marinating, assemble the shish kabobs with pineapple chunks, chicken, ham, onion and bell pepper. Brush the assembled shish kabobs with the remaining marinade.
- Turn the grill on high. Grill the kabobs over direct heat. Turn over after 2 minutes. Grill 2 more minutes. Move the kabobs to indirect heat for an additional 3-5 minutes until the chicken is cooked through. Remove from the grill and serve.
