If you’ve browsed around my blog at all, you know that my family likes pizza. And, we like having fun with our pizza. This homemade pizza pocket recipe is no exception. Basically, I took the almond flour crust we love (Check Out The Recipe Here), doubled the batch, and turned it into tasty, handheld pizza pockets. I remember loving Hot Pockets as a kid, and these hit the spot. For this recipe, I’ve used a ham and pepperoni filling. However, it’d be really easy to switch up the filing with whatever you’re craving.

Make the Almond Flour Pizza Dough

The base of these homemade pizza pockets is the almond four pizza dough. First, melt shredded mozzarella cheese and cream cheese together in the microwave for a minute. Add garlic powder, Italian herbs, and salt to season the dough. Stir everything together and microwave again. When the cheeses are all melted and mixed together, add almond flour. Stir in the almond flour as best as you can. Then, put the dough back into the microwave for another minute. Add olive oil, xanthan gum, and baking powder to the bowl. Stir until everything mixes together and form a dough. Microwave again if needed until everything comes together.

Divide and Roll Out the Pizza Dough

Now that you’ve made your dough, divide it into eight portions. Next, take one portion and roll it into a ball. Then, roll out the portion between two pieces of parchment paper into a long circular shape about 1/8″ thick. Repeat with all the portions until all your dough is rolled out. Your dough might not turn out perfectly shaped, but that’s ok.

Make the Pizza Pocket Filling

With all the pizza pocket dough rolled out, it’s time to make the filling. So, in a large bowl, mix together shredded mozzarella, pizza sauce, mini turkey pepperoni slices and diced ham. Stir your filling together until it’s well combined.

Fill the Pizza Pockets

Once you have the filling made, it’s time to start filling pockets. First, grab one portion of rolled out dough. Then, spoon some filling onto one half of the dough. Repeat with the remaining filling dividing it evenly between all the pizza pockets. Lastly, make sure there’s no filling on the edge of the dough, so the pocket will seal.

Close and Seal the Pizza Pockets

Once you have the ham and pepperoni filling divided evenly, it’s time to close and seal the pizza pockets. First, fold the dough over the filling and line up the edges. Using the parchment paper to fold makes this a little easier. Then, use a fork to crimp the edges together. Just press gently with a fork along all the open edges of the pocket. The pizza pockets will look similar to empanadas.

Bake and Enjoy Your Homemade Pizza Pockets

Once you have made all your pizza pockets and sealed them up, place them on a baking sheet. Then, bake your homemade pizza pockets at 425° for about 15 minutes until they are golden and crispy. Serve and enjoy. You can even do a pizza pocket cheers if you want.

Ingredients

  • 4 1/4 Cups Shredded Mozzarella Cheese, divided
  • 4 Tbsp Cream Cheese
  • 1 tsp each: Garlic Powder, Italian Herb Seasoning, and Salt
  • 1 1/2 Cups Cup Almond Flour
  • 2 tsp Baking Powder
  • 1 tsp Xanthan Gum
  • 2 Tbsp Olive Oil
  • 3/4 Cup Pizza Sauce
  • 7 oz Diced Ham
  • 5 oz Mini Turkey Pepperoni

Directions

  1. Preheat the oven to 425°.
  2. In a microwave safe bowl, combine 3 cups mozzarella cheese, cream cheese, garlic powder, Italian herb seasoning and salt. Microwave for one minute and stir. Repeat until the cheese in melted.
  3. Add the almond flour to the cheese mixture. Stir together as much as possible, then microwave for 1 minute. Add baking powder, xanthan gum, and olive oil to the cheese mixture and stir again. Repeat if necessary until everything is throughly combined and forms a dough. 
  4. Divide the dough into 8 equal portions. Place one portion of dough between two pieces of parchment paper. Roll out the dough into a circular shape about 1/8 inch thick. Repeat with the remaining dough.
  5. In a mixing bowl, combine 1 1/4 cup mozzarella cheese with the pizza sauce, pepperoni, and diced ham. Mix the filling together.
  6. Take one potion of rolled out dough and spoon the filling onto one half of the circle. Don’t put the filling all the way to the edge to the dough. Fold the remaining dough over the top the filling. Line up the edges of the dough to make a pocket. Use a fork to crimp the edges of the dough closed. Repeat for the remaining pockets.
  7. Place all the pizza pockets and a baking sheet (or two). Bake the pizza pockets at 425° for about 15 minutes until they are golden brown and crispy. Remove from the oven and serve.
