One of the ways I simplify my meal planning is to serve a certain type of meal on a specific day of the week (Mexican night, burger night, soup night etc.) So, a family tradition we started years ago, is Friday night pizza and movie night. The girls look forward to it every week; well actually, we all do.
We play around with different toppings every week. Sometimes I buy special ingredients for pizza, and sometimes we create fun combinations out of our leftovers. I’ve also experimented with many types of “crust.” I like this version because it’s easy to hold and has all the best pizza flavors. The Salami crisps up in the oven and makes the perfect vessel for holding all the toppings.
Without the traditional crust, pizza is very low carb. This time I used pepperoni, mushrooms, and olives as toppings, but you could use anything. It would also be a great opportunity for everyone to make their own. And, you could use big slices of pepperoni as the cup instead of salami.
Since you don’t have to make the “crust,” these pizza cups are a fast meal to put together.
The salami has delicate, crispy edges when they come out of the oven, so I like to slide a butter knife under the bottom of the cup to take them out of the cupcake pan.
These Low Carb Salami Cups are the perfect size for appetizers or maybe an after school snack.
My husband and I like to add a salad and make a meal, perfect for lunch or dinner.

Ingredients
- 12 Slices Deli Salami, about 4″ Diameter
- 4 Tbsp Pizza Sauce
- 1/2 cup Shredded Mozzarella Cheese
- 3 oz Diced Pepperoni
- 1/3 cup Diced Mushrooms
- 1/3 cup Silced Olives
Directions
- Pre-heat the oven to 400 degrees.
- In a cupcake pan, line each well with one slice of salami. Make balls out of aluminum foil and put in the center of the salami to help maintain the cup shape while baking. Bake for 12 minutes.
- Remove from the oven and carefully remove the foil from the salami cups.
- Put 1 tsp of pizza sauce followed by 2 tsp of cheese. Top with olives, pepperoni, and mushrooms.
- Bake 7 minutes more. Remove from the oven when the cheese is melted.
- Carefully remove the cups from the cupcake pan (I use a butter knife to get underneath the cups) and enjoy. Makes a tasty appetizer or eat a few to make a meal.
