The best part of a great fusion meal is having all your favorites in one dish. My family loves tacos and pizza. Fiestada pizza is the perfect combination of both. A delicious handheld pizza crust, low carb of course, topped with melted cheese, taco meat and pico de gallo. What’s not to love? And it’s super simple to make.
Whenever I’m cooking, I often make more than we need for one meal. These leftovers are great for meal prepping, usually lunches at work or lunches at home. But sometimes the leftovers in the refrigerator can pile up, and it’s hard to re-imagine them as a new meal. Well, fiestada pizza is a great way to use up taco leftovers and the kids always think “taco pizza” is fun surprise.
Make Ground Beef Taco Meat
The first step in making fiestada pizza, is making the meat. In this case, we’re browning some ground beef. You could also use ground chicken or turkey or use shredded meat too. Season the meat with taco seasoning. Store bought seasoning is easy but so it making your own Homemade Taco Seasoning. If you’re using leftover meat from another meal, skip this step. The prep is even faster.
Season The Pizza Sauce
While the ground beef is browning, make an almond flour pizza crust (Recipe Here). When I’m making fiestada pizza I like to leave out the Italian herbs in the crust, but it’s up to you. Make and roll out the dough and bake it for 10 minutes. Then, the pizza crust will be ready for toppings. Or, if you already have an almond flour crust frozen and ready (this recipe is great for freezing), just pull it out of the freezer. Add some more fiesta flare to your pizza by enhancing the pizza sauce too. Simply mix in chili powder, ground cumin, and ground coriander.
Build Your Fiestada Pizza
Once you have your pizza crust and toppings ready, it’s time to build your pizza. Spread the seasoned pizza sauce on top of the baked crust with the back of a spoon. Next, add a layer of shredded cheese. Shredded cheddar jack cheese works great, or fiesta and taco blend cheese are good options too.
Third, add a layer of seasoned taco meat to the pizza (about 1 cup). And finally, a little more cheese. Bake at 425° for 7-8 minutes until the cheese is melted and bubbly.
Top with Pico de Gallo
Once your fiestada pizza comes out of the oven, finish it off with some fresh Pico de Gallo. You could also get creative some of your other favorite taco toppings. Have fun with your taco pizza fusion.

Ingredients
- 1 Almond Flour Pizza Crust (leave out the Italian Herbs)
- 5 Tbsp Pizza Sauce
- 1/2 tsp Chili Powder
- 1/4 tsp Ground Cumin
- 1/4 tsp Ground Coriander
- 1 Cup Taco Ground Beef
- 1 Cup Cheddar Jack Cheese, Divided
- Pico de Gallo
Directions
- Pre-heat the oven to 425°. Brown ground beef over medium heat in a skillet. Once the meat is browned, season with Taco Seasonings. While the meat is browning, make the almond flour pizza crust (recipe here). Alternatively, use leftover taco meat and pre-made pizza crust for quicker prep. (The almond flour pizza crust recipe freezes well, so you can make up a bunch for quicker meals.)
- In a bowl, mix together the pizza sauce, chili powder, ground cumin and ground coriander.
- Spread the seasoned pizza sauce on top of the prepared pizza crust with the back of a spoon. Sprinkle 3/4 cup of the cheese over the sauce and 1 cup of taco meat. Top the meat with the remaining cheese.
- Bake the pizza at 425° for 7-8 minutes until the cheese is melted. Top your fiestada pizza with pico de gallo as desired and enjoy.
