Looking for an easy meal to switch up your week night routine? This one is a family favorite. I’ve been making it for years. Perfectly cooked, simply seasoned pork loin chops topped with an amazing homemade roasted garlic spread. Make the whole dish in about forty minutes. Or make the spread ahead of time, and get the meal on the table faster. The homemade roasted garlic spread keeps well in the refrigerator. This recipe makes about twice the amount of spread you need for the pork chops, so you can save the extra for another night. The spread also tastes great with chicken, or spread it on some bread to liven up your sandwich.
Roasted Garlic Spread
The star of this recipe is the homemade roasted garlic spread. It’s really easy to make and only takes a few ingredients. Start with two whole bulbs of garlic. Perhaps the hardest part of this recipe is peeling all the garlic. It used to take quite a bit of time until a friend told me about a fun trick.
Instead of peeling each clove of garlic individually, put them all in a glass jar and shake. I had never used this method before, but this recipe was a great time to try it out. Put a lid on the jar and shake really hard. Open the jar, throw away all the skin and put the peeled garlic in a bowl. With so many cloves, not all of them were peeled the first time. Simply repeat the process with any remaining garlic cloves. It only took me 2 rounds of vigorous shaking and all the garlic was peeled. Huge time saver.
Once you have all the garlic cloves peeled, put it in an oven safe dish with two tablespoons of olive oil. Cover the dish with foil and bake at 400° for 25 minutes until the garlic is golden brown and roasted.
To finish the spread, put the roasted garlic cloves in a food processor. Then, add mayonnaise, dijon mustard, salt and onion powder. Process everything together until smooth. Store the roasted garlic spread in the refrigerator. This recipe only uses about half of the spread. The leftovers are also great on chicken and in sandwiches.
Season and Cook the Pork Loin Chops
It only takes a few ingredients to make tender, juicy pork chops. First, brush the meat with a little olive oil and then sprinkle with some season salt or salt and pepper. Then, turn the chops over and repeat.
Cook the pork chops on a pre-heated grill. Both indoor and outdoor grills work. You can also pan fry the pork chops too. Cook the chops for about 5-7 minutes, and then turn over. When you can start to see the meat cooking around the edges, it’s time to flip them. Once the pork loin chops are cooked through, remove them from the heat, and let them rest for a few minutes. Served the grilled pork chops with your homemade roasted garlic spread and enjoy.

Easy Grilled Pork Loin Chops with Roasted Garlic Spread

Ingredients
- 2 1/2 lbs Boneless Pork Loin
- 1 Tbsp Olive Oil
- 1 tsp Season Salt
Roasted Garlic Spread
- 2 Bulbs of Garlic
- 2 Tbsp Olive Oil
- 1 Tbsp Dijon Mustard
- 2 Tbsp Mayonnaise
- 1/2 tsp Salt
- 1/2 tsp Onion Powder
Directions
- Pre-heat the oven to 400°. Place the garlic in a jar and shake vigorously. Remove the garlic skin and discard. Repeat as necessary until all the garlic cloves are peeled, or you can peel them by hand.
- Put the peel garlic cloves and 2 tablespoons olive oil in an oven safe bowl or dish. Cover with foil and bake for 25 minutes until the garlic is golden and roasted.
- While the garlic is roasting, prepare with pork loin chops. If you have thick cut chops, slice them in half to make thin cut chops. Brush the pork chops with olive oil and season with season salt.
- Heat an indoor grill or grill pan over medium high heat. Place the pork chops on the hot grill. Cook the pork chops for 10-15 minutes flipping over halfway through until they are cooked through. Remove from the grill and let them rest covered in foil.
- While the pork chops are resting, finish the garlic spread. Add the roasted garlic to a food processor along with the mayonnaise, dijon mustard, salt and onion powder. Puree until smooth. Serve the grilled pork loin chops with the roasted garlic spread on top. Enjoy.
