When the weather is beautiful, I love to spend as much time as I can outside. We eat most of our meals outside. And we have to have popsicles too. I enjoy reading and working outside, and the kids enjoy playing. And of course we do lots of grilling. Grilling at home, grilling with friends and family, and grilling while camping. This pork tenderloin recipe is great because you can quickly make up the marinade. Then, it’s ready to make at home, take to a gathering or pack for a campout.
Make a Garlic Herb Marinade
If you’ve been reading my blog for awhile, you know my favorite way to make marinades is directly in a zip-top bag. And this recipe is no exception. First, add crushed rosemary, dried tarragon, and salt to the bag. Zest two limes, and add the zest to the bag too. Then, add the lime juice (from both limes), white wine vinegar, honey and olive oil. Finally, squish all the ingredients together inside the bag until they’re thoroughly combined. Mainly you’re looking for the honey to dissolve in the acid, and the marinade is done.
Refrigerate or Freeze the Pork in the Marinade
Once the marinade is done, add the pork tenderloin to the bag. Then, remove the air from the bag and seal it. Move the pork around, so it all gets covered. Finally, refrigerate the pork for at least 4 hours, and let all the flavor infuse the meat. You can also freeze the tenderloin in the marinade. This works great if you’re prepping for a long camping trip. Prepare the meat, keep it in the freezer, and then thaw it out the day you want to cook it. More prep at home, easy cooking while you’re camping. If your package has two tenderloins, like this one, you can divide them up, and freeze the extra for another day.
Grill the Pork Tenderloin
There are lots of options for grilling your pork. You can use an indoor grill or grill pan. You can also use a gas grill, cook over charcoal, or even over a wood fire. Sometimes, the marinade can make the grill messy, so create a tray out of foil for easy clean up. If you cooking over a wood fire, poke some holes in the foil to allow the smoke to enhance the flavor even more.
Sear all the sides of the tenderloin, over high heat. It takes 2-3 minutes per side. After you’ve seared the last side, cook the tenderloin over direct heat for about 20 more minutes, until the internal temperature is 145°. Let the meat rest for about 5 minutes before slicing. Ingredients
- 2 1/2 – 3 lb Pork Tenderloin
- 2 Limes, Zest and Juice
- 1/4 Cup White Wine Vinegar
- 2 Tbsp Honey
- 1/4 Cup Olive Oil
- 3 Cloves Garlic, Crushed
- 2 tsp Crushed Rosemary
- 2 tsp Dried Tarragon
- 1 tsp Salt
Directions
- In a zip-top bag, combine the zest and juice of the two limes, white wine vinegar, honey, olive oil, crushed garlic, crushed rosemary, dried tarragon and salt. Use you hand to mix the ingredients together inside the bag until it’s thoroughly mixed and the honey has dissolved.
- Add the pork tenderloin to the bag of marinade. Remove all the air from the bag, and seal it. Turn the pork around inside the bag to make sure it is coated everywhere. Marinate the pork tenderloin in the refrigerator for 4 hours or overnight. You can also freeze the tenderloin in the marinade if you’re meal prepping.
- Heat up your grill. Cook the pork tenderloin directly on the grill or make a foil “tray” for easier clean up. (If you’re grilling over a wood fire poke holes in the foil for more smoke flavor). Sear the pork tenderloin on all sides. Then, Grill the tenderloin over high heat for about 20 minutes until the internal temperature is 145°.
- Let the pork tenderloin rest for 5 minutes for the juices the redistribute. Finally, slice the meat and serve. Enjoy.
