I love a good soup packed with lots of colorful vegetables. There’s something fun about eating a rainbow. It’s also a nice way to get the kids to try some more vegetables. There’s a tendency to use a variety of vegetables in beef soups but stick to carrots and celery in chicken soup. However, it’s fun to change things up. This recipe uses chicken sweet Italian sausage, which adds a whole new level of flavor.
Cut up the Vegetables
Creating this veggie and sweet Italian sausage soup recipe in the slow cooker is so simple. First, slice up carrots, celery and zucchini. Then, dice up one bell pepper. I used half an orange bell pepper and half of a red bell pepper for more color. Put the cut vegetables in the slow cooker. Add in some fresh or frozen green beans, cutting them into bite sized pieces if necessary.
Put Everything in the Slow Cooker
Once all the cut vegetables are in the slow cooker, add in a can of Italian style diced tomatoes along with crushed garlic, onion powder, and a cube of chicken bullion. Now add the chicken sweet Italian sausage. If you’re using links, just remove the ground sausage from the casing. Last, add water and chicken stock to the slow cooker. Stir everything together while breaking up the ground sausage.
Let your Italian chicken and vegetable soup cook in the slow cooker for 4-5 hours on High or for 8-10 hours on low (basically all day). Take a couple minutes to prep your soup in the morning, and you’ll have a tasty colorful soup for dinner. Garnish your soup with parmesan cheese, or skip it if you’re eating Dairy Free. Ingredients
- 1 Cup Sliced Carrots
- 1 Cup Cut Green Beans, Fresh or Frozen
- 2 Small Zucchini
- 1 Bell Pepper
- 3 Stalks Celery
- 1 lb Chicken Sweet Italian Sausage
- 1 Can (14.5oz) Italian Style Diced Tomatoes
- 3 Cloves of Garlic, Crushed
- 2 tsp Onion Powder
- 2 Cups Chicken Stock
- 1 Chicken Bullion Cube
- 2 Cups Water
- Optional: Parmesan for Serving (Skip for Dairy Free), also try a drizzle of Olive Oil to increase the healthy fats.
Directions
- Slice the carrots, celery, and zucchini. Cut the green beans into 1 inch pieces, and dice the bell pepper. Add all the cut vegetables to the slow cooker.
- Add the sausage, canned tomatoes, crushed garlic, onion powder, chicken stock, water and bouillon cube. Break up the sausage and stir everything together.
- Let the soup cook in the slow cooker on low for 8-10 hours or on high for 4-5 hours.
- Ladle the finished soup into bowls and top with parmesan and olive oil as desired. Enjoy!!
