Just a week or so ago we had family come visit us at our new home in Hawaii. We hadn’t seen them in seven months, and we had a great time. During the visit, I realized there are some things I make all the time that others don’t know how to make. That’s why I’m sharing tortilla pizzas with you this week. It’s more of a technique than a recipe. We make tortilla pizza all the time, almost weekly. They are so kid friendly too. The kids love putting all the toppings on by themselves. My husband actually taught me how to make pizza with a tortilla crust when we first met. We used to make them one at a time in a frying pan, but that doesn’t work when you’re feeding a family. So, I adapted the the technique. Now we make a bunch in the oven at the same time.

Bake the Tortillas

The best part about tortillas pizzas is they are thin and crispy. Who doesn’t love a great thin crust? To achieve this cravable crispiness, pre-bake the tortillas without toppings. First, lay out the tortillas on a baking sheet (cut them in half to fit more if you need). Then, spray both sides with non-stick spray. Bake at 425° for 5-6 minutes until the tortillas are golden. If there are any bubbles, press them down with a spatula. Usually, the top is crispier than the bottom of the tortillas, so flip them over.

Add Your Toppings

Now is the fun part. Add your favorite toppings. When the kids are making their own pizzas, I move the tortilla crusts to a plate so they don’t accidentally touch the hot sheet pan. It’s fun for the kids to help cooking. And, if they make it, they usually eat it. This is also a great way to use up leftovers. Extra taco meat turns into taco pizza. Try leftover chicken with pesto sauce or on a chicken bacon ranch pizza. There are so many possibilities.

Bake Again

Once all the tortilla crusts are covered in delicious toppings, it’s time to put the pizzas back in the oven. Move the loaded pizzas back to the baking sheet. Then, bake for 7-8 minutes, still at 425°, until the cheese is bubbly and melted. Let the tortilla pizzas cool for a minute or so. Finally, slice them with a pizza cutter and enjoy. Ingredients

  • 4 Flour Tortillas (8″ Soft Taco Size)
  • 8 tsp Pizza Sauce
  • 1 Cup Mozzarella Cheese
  • 24 Pepperoni Slices
  • 8 Tbsp Sliced Black Olives

Directions

  1. Pre-heat the oven to 425°. Lay out the tortillas on a baking sheet. Spray both sides with non-stick spray. 
  2. Bake the tortillas for 5-6 minutes until golden brown. Remove the tortillas from the oven and flip them over.
  3. Top the tortillas with pizza sauce, cheese, pepperoni and olives.
  4. Put the tortillas pizza back in the oven for 7-8 minutes until the cheese is melted and bubbly.
