I love this recipe because it’s quick and easy and tastes so good. The sauce is made of 5 simple ingredients: balsamic vinegar, dijon mustard, crushed garlic, onion powder and smoked salt. When I was making this recipe I discovered I didn’t have enough balsamic vinegar in the pantry, so I used red wine vinegar too. You can do it either way, all balsamic or half and half, both taste great.

The prep for this recipe is so quick. All you have to do is mix the sauce ingredients together. To make this Balsamic Pork Loin recipe even easier, mix all the sauce ingredients in a measuring cup and pour it over the pork loin. Using the slow cooker makes our busy evenings a little easier, too.

Turn the slow cooker on low and let the Balsamic Pork Loin cook all day, 8-10 hours. I can get the meat cooking while I’m making the kids breakfast, and I don’t have think about it for the rest of the day. Then, we can come home from our evening’s activities and dinner is served.

When it’s time to eat, remove the Balsamic Pork Loin from the slow cooker and slice it. It’s moist and delicious as is or you can drizzle it with more of the sauce. Perfect for a weekday family meal and fancy enough for a more formal affair.

Ingredients

  • Pork Loin Roast, about 2.5 lbs
  • 1/3 Cup Balsamic Vinegar
  • 1/3 Cup Red Wine Vinegar
  • 2 Tbsp Dijion Mustard
  • 1 tsp Smoked Salt
  • 1 tsp Onion Powder
  • 3 Cloves of Garlic, Crushed

Directions

  1. Put the pork loin in your slow cooker.
  2. Mix together remaining ingredients and pour over the pork loin. Cook on low for 8 hours.
  3. Remove the roast from the slow cooker and slice. Top with pan juices as desired and enjoy.
