There’s nothing more comforting than a hot bowl of creamy, cheesy soup. This Keto Slow Cooker Broccoli Cheddar Soup with Ham is a mouthwatering meal everyone will love.

I like to add a little something extra to the classic Broccoli Cheddar soup.  Ham is the perfect choice. It’s a whole meal in a bowl with the added protein.  I cooked the cubed ham in a fry pan to develop some extra caramelized flavor before adding it to the slow cooker.  You can skip this step if you don’t have time or want to do less dishes. 

The extra vegetables add extra flavor and more nutrition to the meal (shh don’t tell the kids).

Slow Cooker Broccoli Cheddar Soup with Ham only takes 4 hours to cook on low.  So, you can make it in the morning and it will be ready for lunch or do it later so it’s ready for dinner.

Add all the ingredients to the slow cooker except the cheese and let the vegetables cook.  This recipe can easily be made on the stove top in a dutch oven too.

Once all the vegetables are cooked, puree the soup with an immersion blender. (or in batches in a regular blender) Careful, it’s hot. You can also mix in the cheese with the immersion blender, but its hard to clean later. I learned the hard way. I’d recommend stirring it in.

Ingredients

  • 1 Onion, diced
  • 1 cup Grated Carrots
  • 3 Cloves Garlic
  • 6 cups Broccoli Florets
  • 1 Ham Steak, about 8 oz
  • 4 cups Chicken Stock
  • 3 oz Cream Cheese
  • 1 cup Heavy Whipping Cream
  • 1 cup Water
  • 12 oz Sharp Cheddar Cheese, grated

Directions

  1. Cube the ham steak into about 1/2 inch pieces and fry in a frying pan until they are caramelized. (You can skip this step if you want and just add the ham to the slow cooker, but it adds a lot of flavor.)
  2. While the ham is cooking, dice up the onion and grate the carrots and add them to the slow cooker.  Add the broccoli florets to the slow cooker.
  3. When the ham is caramelized, add to the other ingredients along with the chicken stock, cream cheese, heavy cream and water.  Cover and cook on low for 4 hours.
  4. Just before serving, puree the soup with an immersion blender, or in batches in a blender.  Careful, it’s hot. 
  5. Once pureed, slowly stir in the shredded cheese a little at a time until fully incorporated.  Ladle into bowls and enjoy.  Top with extra cheese and fresh broccoli as desired.
