Omelettes are great. Like an egg taco of sorts with all kinds of delicious things inside. We like to eat them for breakfast or brunch on the weekends. And they’re a favorite when we’re having breakfast for dinner. Ham and cheese is a classic combination, but sometimes you need something extra special. Adding cream cheese to the filling gives these omelettes a unique creaminess you don’t get with most omelettes. Everybody loves it, and it’s so simple to do.

Dice the Ham and Brown It

Making this ham and cheese omelette is super simple. First, dice up your ham. I used some deli ham this time, but use whatever you have on hand. This is a great way to use leftover ham from a big dinner. Second, melt coconut oil over medium heat in a small non-stick pan. Add the diced ham to the hot pan, and brown it up. It only takes 5 minutes or so and adds so much flavor.

Make Creamy Ham and Cheese Filling

Now that the ham is browned and delicious, add it to a mixing bowl with shredded cheese and cream cheese. There’s no need to soften the cream cheese because there will be enough heat from the ham. Mix everything together to make the delicious creamy ham and cheese filling.

Time for Eggs

The next step is the eggs. First, whisk together eggs with a little bit of heavy cream. You could also use milk or half-and-half if you prefer. Pour some of the egg mixture into the same non-stick pan you used for the ham. Cover the bottom of the pan with the egg mixture and let it cook. You don’t want to stir it or you’ll have scrambled eggs instead of an omelette. When the eggs are almost all the way cooked (but still runny on top), carefully slide a spatula underneath the omelette and flip it over like a pancake.

Finish the Omelette

After you have flipped the omelette, the eggs will finish cooking. Add some of the creamy ham and cheese filling to the omelette. Fold the omelette or roll it in thirds. Sprinkle some more shredded cheese on top. Let the omelette continue cooking for about a minute, so the filling will get warmed up and melty. You can serve the omelette immediately or keep it warm on a plate. It works well to cover the plate with a large lid or put it in the oven on the keep warm setting. Continue making omelettes until all the eggs and filling are gone. Serve and enjoy.

Ingredients

  • 10 Eggs
  • 10 oz Deli Ham, Diced
  • 1 tsp Coconut Oil
  • 4 oz Cream Cheese, Softened
  • 1 Cup Shredded Cheese + More for Topping
  • 2 Tbsp Heavy Cream

Directions

  1. Heat a small non-stick skillet over medium heat. Add the coconut oil and diced ham. Brown the ham.
  2. Meanwhile, whisk together the eggs and heavy cream.
  3. Once the the ham is browned to your liking, add it to a bowl along with the cream cheese and 1 cup shredded cheese. Mix together to make the omelette filling.
  4. Pour some of the egg mixture into the same non-stick skillet. Make sure the bottom of the skillet is covered and you don’t want it too thin. Let the eggs cook, but don’t mix them. 
  5. Once the eggs are cooked almost all the way through, use a spatula to carefully flip the omelette over, just like flipping a pancake. Put some of the omelette filling on top of the eggs. Let the eggs finish cooking, then gently fold or roll your omelette. Sprinkle shredded cheese on top of the omelette. Let the omelette cook another minute or so, until the filling is warmed through and melty. 
  6. Move the finished omelette to a plate, and continue making the rest of the omelettes. Cover the omelettes to keep warm or keep warm in the oven. Serve and enjoy.
