Breakfast for dinner is one of my family’s favorite traditions. Especially during the school year, brinner makes a weekly appearance in the meal plan. And if it doesn’t, the kids get really disappointed. I started making breakfast for dinner when the kids were young because it was one meal I knew they would always eat. Early in my career as a mother, I realized I did not want picky eaters. And, I didn’t want to be a short order cook in my own kitchen. While always urging the kids to try new things, breakfast (for dinner) is always a meal that requires no encouragement.
Brown the Sausage
Frittatas are a great option for a low-carb breakfast. They are just like a quiche without the crust. Frittatas are easy to make keto friendly too. This frittata brings together the classic flavors of a breakfast sandwich without the carb filled muffin. Start by browning some breakfast sausage in an oven-safe, non-stick skillet. Break up the sausage as it cooks into tasty little crumbles. Once, the sausage is browned, drain it on a plate lined with paper towels.
Time for Eggs
While the sausage is browning, mix up eggs with heavy cream and water. Adding the heavy cream is an easy way to up your fat macros. Of course, if you eating low-carb but not necessarily keto, use milk, half-and-half or just water. Whisk the eggs and liquid together, until they are well blended. Or, another fun and easy way to blend the eggs is in a shaker bottle. Normally designed for mixing up powdered drinks like protein shakes, it’s a really fast way to prep eggs for scrambles, omelettes and frittatas.
Build Your Frittata
Once you have the sausage crumbles out of the pan, pour the egg mixture into the same non-stick pan. Let the eggs start to cook, but don’t stir them. Once you can see the eggs are partially cooked, add the sausage crumbles back to the pan, sprinkling them evenly over the egg mixture. Finally, dollop spoon fulls of ricotta cheese over the top. The ricotta adds delightful creamy bites to the frittata. Turn off the stove and put the whole pan in the over for 15 minutes at 350°.
Top with Shredded Cheese
After 15 minutes in the oven, take the frittata out and add shredded cheese on top. Bake for another 3-5 minutes until the cheese is melted and the eggs are set. Adding the shredded cheese at the end makes sure you get delicious melty cheese in every bite. As soon as the frittata is done cooking, carefully slide it out of the pan, with a spatula, onto a plate. Let the frittata cool for a few minutes, then slice and serve.

Easy Low-Carb Keto Frittata with Sausage, Ricotta and Cheese

Ingredients
- 10 Eggs
- 5 oz Ricotta Cheese
- 1 lb Ground Sausage
- 3/4 Cup Shredded Cheese
- 1/4 Cup Heavy Cream
- 1/4 Cup Water
Directions
- Pre-heat the oven to 350°. In an oven-safe non-stick pan, brown the ground sausage, breaking it up as it cooks.
- While the sausage is cooking, whisk together the eggs, heavy cream and water in a bowl and set aside. Or, add them to a shaker bottle and shake until throughly combined.
- Once the sausage is done cooking, remove it from the pan and let it drain on some paper towels.
- Add the egg mixture to the pan. Once the eggs have started to cook, add the sausage to the eggs, spreading it out evenly. Then, dollop the ricotta on top. Turn off the stove and put the pan in the oven for 15 minutes at 350°.
- After 15 minutes, the frittata should be almost set. Sprinkle the shredded cheese on top of the frittata and put it back in the over for another 5 minutes. The frittata is done when the eggs are set and the cheese is melted. Slide the frittata onto a plate. Slice and serve.
