What is a croquette? Well most dictionaries describe a croquette as a small amount of food (vegetables or meat) often breaded and deep fried. According to What’s Cooking America, croquette literally means a small crunchy morsel. Salmon croquettes were often on the menu for dinner growing up; of course we always called them salmon patties.

Salmon patties were one of my favorites as a kid, and now my kids love them too. This salmon croquettes recipe is inspired by the family recipe. Really, I only changed one ingredient. My parents used crushed crackers as a binder. To keep the carb count low, I swap out the crackers for almond flour. Pan fry your croquettes in a little olive oil, and you have some delicious crunchy morsels.

Start with 3 Ingredients

This simple Salmon Croquettes Recipe starts by combining canned salmon (drained) with egg and almond flour. Break up the salmon with a fork, and mix everything together in a bowl. Then, use a measuring cup to scoop out even portions. The 1/3 cup size measuring cup works great. If you’re making appetizers, you might want to make the patties smaller.

Next, get a non-stick skillet heating over medium on the stove. Use the bottom of the measuring cup to flatten out your patties. Once you pan is warm, add olive oil. Add your salmon patties to the pan. Work in batches to leave enough room for flipping.

After 4-5 minutes, flip your croquettes over when they are nice and golden brown. Cook the second side for an additional 4-5 minutes until golden. Once the salmon croquettes are cooked on both sides, remove them from the pan. Repeat the process for all the patties.

Lemon Mayo Drizzle

Salmon croquettes are great as-is, or you can add a sauce. I like to make up a lemon mayonnaise. Simply add mayonnaise, lemon juice and lemon zest to a reusable condiment bottle. Put on the lid and shake it up to mix. The condiment bottle makes it easy to drizzle your salmon croquettes, and you can save any extra in the refrigerator for another day. You can always mix the ingredients in a bowl too if you don’t have a condiment bottle.

Ingredients

  • 18 oz Canned Salmon
  • 1/3 Cup Almond Flour
  • 1 Egg
  • 2 Tbsp Olive Oil
  • 1/2 Lemon
  • 2 Tbsp Mayonnaise

Directions

  1. Drain the canned salmon, and add it to a mixing bowl. Break up the salmon with a fork. Add the almond flour and egg to the bowl and mix everything together.
  2. Use a 1/3 cup dry measuring cup to divide the salmon mixture into 6 portions. Use the measuring cup to flatten out the patties.
  3. Heat a non-stick frypan over medium heat. Once the pan is heated up, add the olive oil to the pan. Fry the salmon croquettes in batches. Flip the croquettes over after about 4-5 minutes, when they are golden brown and repeat. Fry the rest of the salmon patties the same way.
  4. While the salmon is cooking, zest and juice the lemon. Add the lemon juice and zest and the mayonnaise to a reusable condiment bottle. Put the lid on and shake it up to mix.  Alternatively, mix the ingredients in a bowl.
  5. Serve your salmon croquettes drizzled with the lemon mayonnaise and enjoy!!
