Busy nights need quick and easy meals, especially now that most kids are home for school. Lives have changed and so have our responsibilities. With the kids at home all the time, there’s less time for meal planning and grocery shopping. It’s great to have a list of quick and easy meals to go to when you just can’t think of what to make. Add this stove top salmon recipe to your list. It only takes 15 minutes to put together (as long as the fish is thawed) and has only four ingredients. Not only is it fast; it’s also packed with flavor. A winner all around.

Mince Sun-Dried Tomatoes

Sun-dried tomatoes are a fun ingredient to use. The drying process intensifies the sweet and tangy flavor of the tomatoes. Just a little bit adds lots of flavor to your meal. You can buy sun-dried tomatoes at the grocery store; they’re usually preserved in oil. If you can’t find them, look for sun-dried tomato pesto near the pasta sauces. Growing up, we would make sun-dried tomatoes simply by dehydrating tomato slices. It was one of my favorite snacks. So, for this recipe, start by chopping up two ounces of sun-dried tomatoes. Drain off the oil if necessary, and mince the tomatoes as small as you can.

Mix the Tomatoes with Feta Cheese

Once the sun-dried tomatoes are minced, add them to a bowl. Then, add two ounces of feta cheese to the bowl, and mix it all together. The salty, crumbly feta cheese pairs deliciously with the sun-dried tomatoes in this Mediterranean inspired salmon recipe. Save the topping for later.

Sauté the Salmon

The salmon cooks up real quickly. First, pat the salmon dry with a paper towel. Then, season the fillets with salt and pepper on both sides. Heat a non-stick skillet over medium to medium-high heat. When the pan is hot, add a little olive oil, and swirl to coat the pan. Next, add the seasoned salmon fillets to the pan. Turn the salmon over after about five minutes, when it easily releases from the pan. Cook the fillets on the second side for another three to five minutes until the salmon is cooked through and flakes easily. Remove the pan from the heat, and top the salmon with the sun-dried tomato cheese mixture. Serve and enjoy.

Ingredients

  • 1 Pound Skinless Salmon Fillets
  • 2 oz Sun-Dried Tomatoes, drained
  • 2 oz Feta Cheese
  • 1 Tbsp Olive Oil
  • Salt and Pepper to taste

Directions

  1. Pat the salmon dry with a paper towel and season with salt and pepper on both sides.
  2. Heat a pan on the stove over medium to medium-high heat. 
  3. While the pan is heating up, finely mince the sun-dried tomatoes. Add them to a bowl with the feta cheese, mix together and set aside.
  4. When the pan is hot, add the olive oil and swirl to coat the pan. Put the seasoned salmon fillets in the pan. Cook the salmon about 5 minutes, and then flip the fillets over. Cook another 3-5 minutes until the salmon is opaque and flakes easily.
  5. Remove the pan from the heat and top the fillets with the tomato feta mixture. Serve and enjoy.
