Green beans are a favorite vegetable in our house.  We like them lots of ways.  I often steam them for a fast, simple side everyone will eat. But, sometimes it’s fun to get fancy.  This Green Bean Almondine recipe might be fancy, but it’s still quick and easy.

Fun fact I just learned, almondine, also spelled amandine, means garnished with almonds.  Hmmmm? What else can I make almondine? I tried toasting the almonds with butter.  It worked well and was flavorful. But, after the almonds cooled a little, they were just soggy.  I like the almonds with a crunch for added texture. So, I think the best way is to toast the almonds in a fry pan by themselves.  It doesn’t take long, so don’t leave the kitchen.  They go from not-toasted to toasted very quickly.

After the green beans are steamed, it’s time to create the dressing in the fry pan.  The dried lemon peel adds a beautiful fragrance and the perfect finishing touch to the green beans almondine.

Ingredients

  • 1 pound Green Beans, Fresh or Frozen
  • 3 oz Sliced Almonds
  • 2 Tbsp Butter
  • 1 tsp Dried Lemon Peel
  • Salt and Pepper to taste

Directions

  1. Steam green beans until tender crisp, 10-15 minutes.
  2. While beans are steaming, add the sliced almonds to a fry pan. Toast over medium low heat, watching carefully.  Stir for even toasting. Remove the almonds from the pan when they start to turn golden, about 5 minutes.
  3. After the green beans have finished steaming, remove from heat. In the empty fry pan, melt butter over medium heat.  Once melted, add green beans, salt and lemon peel. Toss until well coated. Top with toasted almonds and serve.
