I’m excited to share this recipe with you because it’s so easy and delicious. I got a bunch of farm fresh tomatoes in my CSA box this week. They are so beautiful, and I decided to do something special with them instead of just tossing them in a salad. I’ve seen broiled tomatoes, but I’ve never tried making them myself. I didn’t want to make a trip to the store for ingredients, so I grabbed some staples from the refrigerator. They taste great, they are really quick to make, and the whole family loves them. Win, win, win!! I made these broiled tomatoes as a side dish for dinner, but they would also make a great appetizer. Perfect for a summer gathering when tomatoes are at their best, especially if you’ve got a bunch ripening in your garden.
Slice the Tomatoes
The first step in making broiled tomatoes is prepping the tomatoes. So, slice all the tomatoes in half through the stem. Then, make a v-shaped cut to remove the stem from each half. Finally, make very small slice off the bottom of the tomato halves to make them flat. That way they won’t roll around on the pan. Once all the tomatoes are sliced, season them with a little salt.
Top with Pesto
The next step in this easy recipe is to brush pesto on top of the tomato halves. Making homemade pesto is pretty easy if you have fresh basil. Or, make this recipe even simpler by buying the pesto pre-made at the grocery store. I recommend buying the pesto in the refrigerated section, usually near the grated parmesan. It has a much better flavor than the pesto in the center isles of the grocery store. The preservatives does something to the fresh flavor.
Sprinkle with Parmesan
The final ingredient in this three ingredient recipe is parmesan. Parmesan is a staple in my refrigerator making it the perfect finishing touch. Mozzarella would be a good choice too. Simply sprinkle the cheese on top of the tomatoes, and they are ready for the oven.
Time to Broil
It only takes about five minutes to prep these tasty beauties, and they are ready to broil. Turn the boiler on high, and put the tomato halves on a baking sheet. Broil the tomatoes for 3-5 minutes. Watch them closely. They are ready when the cheese is bubbly and the tomato skin starts to blister a bit. Serve and enjoy.

Ingredients
- 4 Medium Tomatoes
- 1 Tbsp Pesto
- 2 Tbsp Parmesan Cheese
- Salt to taste
Directions
- Pre-heat the broiler in the oven.
- Cut the tomatoes in half through the stem. Trim out the stem section of the tomatoes. Make a small slice off the bottom of the tomato halves so they are flat and don’t roll around.
- Season the tomatoes with salt to taste.
- Use a pastry brush to spread the pesto on the top of the tomato halves.
- Sprinkle the parmesan evenly over all the tomato halves.
- Place all the tomatoes on a baking sheet. Then, broil the tomatoes for 3-5 minutes, watching carefully, until the cheese melts and bubbles. Serve and enjoy.
