Beef stroganoff is a classic dish filled with hearty chunks of beef and earthy mushrooms covered in rich and creamy sauce. It’s true comfort food that warms you up from the inside. And there’s no reason comfort food has to be difficult to make. Buy pre-cut stew meat and pre-sliced mushrooms, so the prep is really quick. Then, let the slow cooker do all the work. The flavors will develop throughout the day, and all you have to do is enjoy time with the family over a delicious meal.

Brown the Beef

The best way to enhance the delicious beef flavor is to brown the meat. So, heat up a skillet over medium-high heat. While the pan is heating up, season the beef stew meat with salt and pepper. When the pan is hot, add a tablespoon of butter to the pan and the seasoned beef. Brown the beef, stirring occasionally to get all the sides, and then put it in your slow cooker.

Sauté the Mushrooms and Onions

While the beef is browning, dice the onion. Once the beef is browned and in the slow cooker, and the diced onion and sliced mushrooms to the pan. Stir the mushrooms and onions, and sauté them for about five minutes until they get soft.

Add Some Red Wine

As soon as the onions and mushrooms have softened, it’s time to finish off the sauce. So, add red wine, crushed garlic, and dijon mustard to the pan. Stir everything together, and let it simmer for a minute or so.

Slow Cook All Day

After your mushroom sauce has simmered, pour everything into the slow cooker. Add in a can of beef broth, and give everything a quick stir. Then, let it slow cook all day on low. Really, the flavors get better the longer the stroganoff cooks. A quick fifteen minutes of prep, and your slow cooked comfort food will be ready when you are.

Stir in the Cream and Enjoy

When it’s time to sit down and enjoy dinner, stir some sour cream and cream cheese into the beef mixture. The sour cream will give the stroganoff the classic tanginess. Ingredients

  • 1 lb Beef Stew Meat
  • 1 Tablespoon Butter
  • 1/2 Cup Red Wine
  • 1 Medium Onion
  • 8 oz Sliced Mushrooms
  • 4 Garlic Cloves, Crushed
  • 2 Tbsp Dijion Mustard
  • 1 Can Beef Broth (14.5oz)
  • 1 Cup Sour Cream
  • 1/3 Cream Cheese
  • Salt and Pepper to Taste
  • 4 Cups Prepared Zucchini Noodles

Directions

  1. Heat a sauté pan on the stove over medium-high heat. Season the stew meat with salt and pepper. When the pan is hot, add the butter to the pan and the beef. Brown the beef, and then move it to the slow cooker.
  2. While the beef is browning, dice the onion. After moving the browned beef to the slow cooker, add the sliced mushrooms and diced onions to the sauté pan. Turn the stove down to medium heat. Stir and sauté the mushrooms and onions for about 5 minutes until they are soft.
  3. When the mushrooms and onions are soft, add the crushed garlic, red wine, and dijon mustard to the pan. Stir the sauce and let it simmer for about a minute. Then, pour the mushroom sauce into the slow cooker with the beef. 
  4. Add the beef broth to the slow cooker. Put the lid on the slow cooker, and let the stroganoff cook all day (7-8 hours) on low.
  5. Right before serving, stir in the sour cream and cream cheese. Serve the beef stroganoff over the zucchini noodles. Enjoy.
