Brown the Beef

Ingredients
- 1 lb Beef Stew Meat
- 1 Tablespoon Butter
- 1/2 Cup Red Wine
- 1 Medium Onion
- 8 oz Sliced Mushrooms
- 4 Garlic Cloves, Crushed
- 2 Tbsp Dijion Mustard
- 1 Can Beef Broth (14.5oz)
- 1 Cup Sour Cream
- 1/3 Cream Cheese
- Salt and Pepper to Taste
- 4 Cups Prepared Zucchini Noodles
Directions
- Heat a sauté pan on the stove over medium-high heat. Season the stew meat with salt and pepper. When the pan is hot, add the butter to the pan and the beef. Brown the beef, and then move it to the slow cooker.
- While the beef is browning, dice the onion. After moving the browned beef to the slow cooker, add the sliced mushrooms and diced onions to the sauté pan. Turn the stove down to medium heat. Stir and sauté the mushrooms and onions for about 5 minutes until they are soft.
- When the mushrooms and onions are soft, add the crushed garlic, red wine, and dijon mustard to the pan. Stir the sauce and let it simmer for about a minute. Then, pour the mushroom sauce into the slow cooker with the beef.
- Add the beef broth to the slow cooker. Put the lid on the slow cooker, and let the stroganoff cook all day (7-8 hours) on low.
- Right before serving, stir in the sour cream and cream cheese. Serve the beef stroganoff over the zucchini noodles. Enjoy.
